Pat's Apple Cake
 
1/4 lb plus 2T. butter, semi-softened
2 eggs
1 c white sugar
1 tspn vanilla
1/4 tspn cinnamon
1 c white flour
2 c peeled, chopped apples - MacIntosh, Cortland, or Empire, etc.
1/2 c chopped walnuts
 
Place all ingredients in the food procesor.
Blend.
Pour batter into greased 9" x 9" baking dish.
Bake at 350F for 40-50 minutes.
Dust with a bit of icing sugar when semi-cooled.
Can be 'turned out' from the pan as a square cake, or nice thick slices can be cut from the pan.
 
Goes deliciously with french vanilla ice cream.- warm or cold.  Packs well in lunch boxes.
