Micki's Double Apple Muffins

 

3/4 C + 2 tbsp brown sugar, packed
1/4 C pecan pieces
1/2 tsp ground cinnamon
1 C all-purpose flour
1 C whole wheat flour
1 tsp baking soda
1/2 tsp salt
1/4 C vegetable oil
2 eggs
1 C unsweetened applesauce
1 tsp vanilla extract
3/4 C buttermilk
1 apple, peeled, cored, and cut into 1/4-inch pieces

 

Preheat oven to 400 degrees F. Line a 12-cup muffin tin with paper liners.

 

For topping, mix 2 tbsp brown sugar, pecans, and cinnamon in small bowl.

 

In medium bowl, whisk together flours, baking soda, and salt.

 

In large bowl whisk remaining brown sugar and oil. Add eggs one at a time. Whisk in applesauce and vanilla. Stir in the flour mixture in two batches, alternating with the buttermilk; stir until just combined. Fold in apple chunks.

 

Fill muffin cups and sprinkle with topping. Bake for 20 minutes or until a tester inserted into center comes out clean. Let cool 15 minutes in pan, then remove to wire rack to cool completely.

 

Makes 12 muffins.
